2.     Welcome/Orientation Tuesday, 12:30 p.m.

4.     Fabulous Food Frenzy   Tuesday, 1:15 p.m. (this is an all-participant activity)

      One of the most fun food service team building activities, ever!!  We’ll introduce ‘Funky Lunch’ and challenge each team to make some fun kid meals, demonstrate service and display these artistic works to impress!

 

5.     The New Nutrition Standards (What are we serving now?) - Tuesday, 2:00 p.m.

With the recent publication of the new guidelines there’s a lot to know about nutrition standards.   Linda will review the standards and give guidance in revising menus to meet the 2010 Dietary Guidelines.

        

6.     Tuna…The Wonderfish!  Tuesday, 3:15 p.m.

Ask any Mermaid you happen to see, what’s the best tuna?  Chicken of the Sea!  An interactive discussion focusing on Tuna, which includes: different species, sustainability practices, nutrition, recipes, and most importantly, how to incorporate it into your camp menu.

 

7.     Lake Shore Walking Tour sans Ice Tuesday, 4:30 p.m.

      YMCA Camp Chingachgook Staff Person

      Enjoy a walk along the beautiful shore of Lake George.  Experience the breathtaking view of the surrounding mountains.  Dress warmly.  Find the ice you were hoping to walk on in your glass at the Adirondack Reception!!!

        

8.     New Comers Camp Tour Tuesday, 4:30 p.m.

      Explore all that YMCA Camp Chingachgook has to offer.  A Camp Chingachgook staff member will give you a tour of our facilities and answer any of your questions.  Dress warmly.

        

9.     Adirondack Reception Tuesday, 5:15 p.m., Dining Hall

      Join us for Happy Hour and enjoy some hors d’oeuvres, beer, and wine on the veranda of our Adirondack dining lodge.

        

10.  Roundtable Discussion (Going Local)   Tuesday evening, 6:30 p.m.,

      Take a guided walk in the Adirondack Forest to a scenic overlook of beautiful Lake George.  Dress warmly.

 

12.  King Arthur Bread 101 - Wednesday, 8:45 a.m.

We'll also discuss how kids can learn and use these skills to bake with their families and share bread in their communities.

So many guests with special diets to accommodate!  How do you feed them all and ensure that all their meals are safely prepared?  We’ll share the methods we use at our camps and some food options we serve, too.  Be prepared to pepper the panel with questions!

 

15.  Vendor Food Show Wednesday, 12:00 p.m.

      Quandt’s Foodservice Distributors, Inc

      Vendors will feature some new items & ideas that fit in with current food trends for you to use at camp.   They’ll offer creative recipe ideas and uses, theme meals, and multiple uses for their products which you can taste test and even take a few samples with you. 

        

16.  Bread (The Proof is in the Finished Loaf!) Wednesday, 1:15 p.m.

Vegan, vegetarian, celiac, dairy allergy, egg allergy; the list is endless.  Discover some new ideas for preparing meals for those special guests.
